Description

Ingredients

  • 12 oz dark chocolate (60–70% cacao), finely chopped
  • 3/4 cup heavy cream
  • 2 tbsp butter, softened
  • 3 tbsp seedless raspberry jam or puree
  • 1 tsp vanilla extract (alcohol-free)
  • Pinch of salt
  • 1 cup unsweetened cocoa powder
  • 1/2 cup powdered sugar (optional)
  • Optional for dipping: melted chocolate, freeze-dried raspberry pieces, pink sanding sugar, or white chocolate drizzle

Instructions

  1. Heat the cream in a small saucepan over medium heat until gently simmering, ensuring it doesn’t boil.
  2. Pour the hot cream over the chopped chocolate in a mixing bowl and let sit for two minutes before stirring until smooth.
  3. Add the softened butter, raspberry jam, vanilla extract, and salt, stirring until fully combined.
  4. Cover the ganache with plastic wrap and refrigerate for 2-3 hours until firm.
  5. Portion out the ganache using a small cookie scoop, rolling each piece into smooth balls.
  6. Freeze the truffles on a parchment-lined baking sheet for 15 minutes.
  7. Roll the truffles in cocoa powder or dip in melted chocolate, adding optional garnishes if desired.
  8. Refrigerate until set before serving.
