- 3 tbsp seedless raspberry jam or puree
- 1 tsp vanilla extract (alcohol-free)
- Pinch of salt
- 1 cup unsweetened cocoa powder
- 1/2 cup powdered sugar (optional)
- Optional for dipping: melted chocolate, freeze-dried raspberry pieces, pink sanding sugar, or white chocolate drizzle
Instructions
- Heat the cream in a small saucepan over medium heat until gently simmering, ensuring it doesn’t boil.
- Pour the hot cream over the chopped chocolate in a mixing bowl and let sit for two minutes before stirring until smooth.
- Add the softened butter, raspberry jam, vanilla extract, and salt, stirring until fully combined.
- Cover the ganache with plastic wrap and refrigerate for 2-3 hours until firm.
- Portion out the ganache using a small cookie scoop, rolling each piece into smooth balls.
- Freeze the truffles on a parchment-lined baking sheet for 15 minutes.
- Roll the truffles in cocoa powder or dip in melted chocolate, adding optional garnishes if desired.
- Refrigerate until set before serving.
