- 1 cup all-purpose flour
- 1/4 cup light brown sugar (packed)
- 1/2 cup unsalted butter (softened)
- 8 ounces cream cheese (softened)
- 1 large egg
- 1/2 cup granulated sugar
- 1 teaspoon vanilla extract
- 2 cups small diced apples (from 2 medium apples, peeled and cored)
- 2 tablespoons granulated sugar
- 1 tablespoon cinnamon
- 1/4 teaspoon ground nutmeg
- 1/2 cup light brown sugar (packed)
- 1/2 cup all-purpose flour
- 1/2 cup old-fashioned whole rolled oats
- 6 tablespoons unsalted butter (softened)
- 1/2 cup ice cream (optional for serving)
Instructions
- Preheat your oven to 350°F (175°C). In a medium bowl, mix 1 cup of flour, 1/4 cup brown sugar, and 1/2 cup butter until the mixture resembles coarse crumbs. Press this mixture into the bottom of your prepared baking pan. Bake for 10 minutes, then allow it to cool slightly.
- Beat the softened cream cheese in another mixing bowl with an electric mixer until creamy. Gradually add granulated sugar and mix until smooth. Blend in the egg and vanilla extract until combined, then pour over the cooled crust and spread evenly.
- Toss diced apples with 2 tablespoons of sugar, cinnamon, and nutmeg in a large bowl. Layer the apples over the cheesecake mixture evenly.
- Combine 1/2 cup light brown sugar, 1/2 cup flour, and 1/2 cup oats in a bowl. Stir in softened butter until crumbly and sprinkle on top of the apple layer.
- Bake for an additional 25-30 minutes, until the topping is golden brown and the cheesecake layer is firm. Cool completely before slicing into squares.
Notes
For added decadence, drizzle with caramel sauce after cooling. You can prepare the crust and cheesecake layer a day in advance.
