- 1 lb ground beef
- 1 can (15 oz) kidney beans, drained and rinsed
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (10 oz) diced tomatoes with green chilies
- 1 cup corn kernels (fresh or frozen)
- 1 cup shredded cheddar cheese
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tsp chili powder
- 1 tsp cumin
- Salt and pepper to taste
- 1 cup crushed tortilla chips (optional)
Instructions
- Preheat the oven to 350°F (175°C).
- In a large skillet, brown the ground beef over medium heat. Drain excess fat.
- Add chopped onion and minced garlic to the skillet, cooking until softened.
- Stir in kidney beans, black beans, diced tomatoes, corn, chili powder, cumin, salt, and pepper. Mix well and let simmer for 5 minutes.
- Transfer the mixture to a greased baking dish.
- Top with shredded cheddar cheese and crushed tortilla chips if using.
- Bake in the preheated oven for 25-30 minutes, or until the cheese is melted and bubbly.
- Let cool for a few minutes before serving.
Notes
- Feel free to add other vegetables like bell peppers or zucchini for extra nutrition.
- This casserole can be made ahead of time and stored in the refrigerator before baking.
