Description

Cattle Drive Casserole is a hearty and comforting dish that combines ground beef, beans, and a variety of spices, topped with a cheesy layer, perfect for family gatherings.


Ingredients

  • 1 lb ground beef
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (10 oz) diced tomatoes with green chilies
  • 1 cup corn kernels (fresh or frozen)
  • 1 cup shredded cheddar cheese
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tsp chili powder
  • 1 tsp cumin
  • Salt and pepper to taste
  • 1 cup crushed tortilla chips (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large skillet, brown the ground beef over medium heat. Drain excess fat.
  3. Add chopped onion and minced garlic to the skillet, cooking until softened.
  4. Stir in kidney beans, black beans, diced tomatoes, corn, chili powder, cumin, salt, and pepper. Mix well and let simmer for 5 minutes.
  5. Transfer the mixture to a greased baking dish.
  6. Top with shredded cheddar cheese and crushed tortilla chips if using.
  7. Bake in the preheated oven for 25-30 minutes, or until the cheese is melted and bubbly.
  8. Let cool for a few minutes before serving.
