- 4 medium red potatoes
- 1 lb ground beef or turkey
- 1 packet taco seasoning
- 1 cup shredded cheese (cheddar or Mexican blend)
- 1/2 cup sour cream
- 1/4 cup chopped green onions
Instructions
- Preheat your oven to 400°F (200°C).
- Wash and cube the red potatoes, then boil them in salted water until tender, about 10-12 minutes. Drain and set aside.
- In a skillet, cook the ground beef or turkey over medium heat until browned, draining any excess fat.
- Stir in the taco seasoning and a little water according to the packet instructions, allowing to simmer for a few minutes.
- Combine the cooked potatoes with the seasoned meat, half of the cheese, sour cream, salt, and pepper in a large bowl.
- Transfer the mixture to a greased baking dish, spreading it out evenly. Top with the remaining cheese.
- Bake for 20-25 minutes or until the cheese is bubbly and golden brown.
- Garnish with chopped green onions before serving.
Notes
This dish can be made ahead of time and stored in the fridge overnight. Reheat before serving.
