Description

A comforting casserole of seasoned meat, creamy cheese, and crunchy potatoes that create a symphony of flavors.


Ingredients

  • 4 medium red potatoes
  • 1 lb ground beef or turkey
  • 1 packet taco seasoning
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1/2 cup sour cream
  • 1/4 cup chopped green onions

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash and cube the red potatoes, then boil them in salted water until tender, about 10-12 minutes. Drain and set aside.
  3. In a skillet, cook the ground beef or turkey over medium heat until browned, draining any excess fat.
  4. Stir in the taco seasoning and a little water according to the packet instructions, allowing to simmer for a few minutes.
  5. Combine the cooked potatoes with the seasoned meat, half of the cheese, sour cream, salt, and pepper in a large bowl.
  6. Transfer the mixture to a greased baking dish, spreading it out evenly. Top with the remaining cheese.
  7. Bake for 20-25 minutes or until the cheese is bubbly and golden brown.
  8. Garnish with chopped green onions before serving.

Notes

This dish can be made ahead of time and stored in the fridge overnight. Reheat before serving.
