- 300 g Chicken Breast
- 200 g Cream Cheese
- 150 g Fresh Spinach
- 2 Cloves Garlic, minced
- 1 Onion, diced
- 2 tbsp Olive Oil
- Salt & Pepper, to taste
- Parmesan (optional), for serving
Instructions
- Cook the Pasta: Bring a large pot of salted water to a boil, and add the pasta. Cook according to package directions until al dente, reserving a cup of pasta water for later use.
- Sauté Aromatics: Heat olive oil in a large skillet over medium heat. Sauté onion and garlic for 3-4 minutes until fragrant.
- Add Chicken: Cut chicken into bite-sized pieces and cook for 6-8 minutes until golden brown.
- Incorporate Spinach: Add fresh spinach to the skillet and let it wilt for 1-2 minutes.
- Make Creamy Sauce: Stir in the cream cheese, adjusting the consistency with the reserved pasta water as needed.
- Combine Pasta: Drain pasta and add to the skillet, mixing until well coated.
- Season to Taste: Add salt, pepper, and Parmesan if using, and toss together.
- Serve Hot: Transfer to plates and enjoy warm.
Notes
For a vegetarian option, substitute chicken with chickpeas or sautéed mushrooms. For customization, add red pepper flakes for heat or other vegetables for variation.
