- 2–3 chicken breasts (boneless, skinless)
- 1 large onion, thinly sliced
- 2 cloves garlic, minced
- 1 cup shredded cheese (Gruyère or Swiss)
- 1 cup chicken broth
- 1/2 cup sour cream
- 1 tbsp olive oil
- 1 tsp thyme
- Salt and pepper, to taste
Instructions
- Start caramelizing your onions: In a large skillet, heat the olive oil over medium heat. Add the sliced onions, stirring occasionally, and cook until they caramelize — about 15-20 minutes.
- Add garlic for depth: Stir in minced garlic and cook for another minute until fragrant.
- Cook the chicken: Add your seasoned chicken breasts, sprinkling thyme, salt, and pepper generously. Cook until the chicken is browned and completely cooked through, about 6-7 minutes per side.
- Slice and set aside: Remove the chicken from the skillet.
- Build your sauce: In the same skillet, pour in the chicken broth and bring it to a gentle simmer. Stir in the cooked rice, sour cream, and shredded cheese.
- Bring it all together: Return the sliced chicken to the skillet, mixing gently to coat every piece.
- Serve and enjoy: Dish up your meal hot, garnishing with fresh herbs if you wish.
