Description
A luscious, creamy pasta dish featuring ripe tomatoes and garlic, ideal for cozy dinners.
Ingredients
Scale
- 200g pasta (spaghetti, fettuccine, or penne)
- 1 cup heavy cream
- 2 cups ripe tomatoes, chopped
- 3 cloves garlic, minced
- 2 tablespoons olive oil
- Salt and pepper to taste
- Fresh basil for garnish
- Parmesan cheese for serving
Instructions
- Cook the pasta: Start by bringing a large pot of salted water to a boil and cook the pasta according to package instructions until it’s al dente. Drain it, but don’t rinse; you want the starchy surface to help the sauce adhere. Set it aside.
- Sauté the garlic: In a generous skillet, heat the olive oil over medium heat. Once it shimmers, add the minced garlic and sauté for about 1 minute until fragrant, making sure not to let it brown.
- Add the tomatoes: Stir in the chopped tomatoes, allowing them to cook down and soften for about 5 minutes.
- Incorporate the cream: Pour in the heavy cream and stir until the mixture is cohesive. Let it simmer gently for a few minutes.
- Season: Sprinkle salt and pepper to taste, adjusting according to your palate.
- Combine with pasta: Add the cooked pasta to the sauce and toss enthusiastically.
- Serve: Plate the pasta hot, and finish with fresh basil and a generous sprinkle of Parmesan cheese.
Notes
Store leftovers in an airtight container in the fridge for up to 3 days. Reheat gently on the stovetop.
