Description

  • 2 cups ripe tomatoes, chopped
  • 3 cloves garlic, minced

Instructions

  1. Cook the pasta: Start by bringing a large pot of salted water to a boil and cook the pasta according to package instructions until it’s al dente. Drain it, but don’t rinse; you want the starchy surface to help the sauce adhere. Set it aside.
  2. Sauté the garlic: In a generous skillet, heat the olive oil over medium heat. Once it shimmers, add the minced garlic and sauté for about 1 minute until fragrant, making sure not to let it brown.
  3. Add the tomatoes: Stir in the chopped tomatoes, allowing them to cook down and soften for about 5 minutes.
  4. Incorporate the cream: Pour in the heavy cream and stir until the mixture is cohesive. Let it simmer gently for a few minutes.
  5. Season: Sprinkle salt and pepper to taste, adjusting according to your palate.
