Description

A luscious pasta dish combining sweet cherry tomatoes, creamy goat cheese, and aromatic garlic, creating a comforting and indulgent experience.


Ingredients

  • 8 oz pasta (penne or spaghetti)
  • 2 cups cherry tomatoes, halved
  • 4 oz goat cheese
  • 2 cloves garlic, minced
  • 2 tbsp olive oil
  • 1/2 tsp red pepper flakes (optional)
  • Salt and pepper to taste
  • Fresh basil for garnish

Instructions

  1. Cook the pasta according to package instructions until al dente. Drain it thoroughly and set it aside.
  2. In a large skillet over medium heat, drizzle in the olive oil. Add the minced garlic and sauté for about a minute until fragrant.
  3. Toss in the halved cherry tomatoes and let them sizzle and soften for about 5-7 minutes until they begin to burst.
  4. Crumble the goat cheese into the skillet and stir gently to combine, allowing it to melt and create a creamy sauce.
  5. Add the cooked pasta to the skillet, mixing everything thoroughly and seasoning with red pepper flakes, salt, and pepper.
  6. Serve hot, garnished with fresh basil.
