Description

A delightful blend of crispy crust and tender interior, infused with the vibrant flavors of wild garlic.


Ingredients

Scale
  • 500 g wheat flour
  • 1 packet dry yeast
  • 1 teaspoon salt
  • 300 ml warm water
  • 100 g fresh wild garlic
  • 2 tablespoons olive oil
  • Pepper to taste

Instructions

  1. Whisk together the wheat flour, dry yeast, and salt in a large bowl.
  2. Pour in the warm water and drizzle in the olive oil, stirring until combined.
  3. Chop the fresh wild garlic and fold it into the dough evenly.
  4. Place the dough onto a floured surface and knead for 5–10 minutes until smooth.
  5. Transfer the dough to a greased bowl, cover with a towel, and let rise in a warm place for about 1 hour.
  6. Turn the risen dough onto a floured surface, knead briefly, and shape into a loaf.
  7. Rest the dough for 30 minutes to develop its texture.
  8. Preheat the oven to 220 °C (428 °F) and bake for 25–30 minutes until golden brown.
  9. Remove from the oven and cool on a rack before serving.

Notes

For a softer crust, cover with a kitchen towel during the last few minutes of baking. You can also store it in a paper bag or wrap in a kitchen towel for up to two days.
