Description

Delightful mini potato skins that are crispy on the outside and loaded with cheese and bacon on the inside, perfect for any gathering.


Ingredients

  • Mini Potatoes
  • Olive Oil
  • Salt
  • Pepper
  • Shredded Cheese (Cheddar)
  • Bacon Bits
  • Sour Cream
  • Chives

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Scrub mini potatoes clean and poke each several times with a fork.
  3. Toss potatoes in a bowl with olive oil, salt, and pepper.
  4. Spread on a baking sheet and bake for 20-25 minutes until tender.
  5. Let potatoes cool, then cut in half and scoop out a small amount of flesh.
  6. Fill each half with shredded cheese and bacon bits.
  7. Return to oven for an additional 10 minutes to melt cheese.
  8. Serve hot with sour cream and chives.
