Description

A sumptuous chocolate cake layered with luscious caramel and crunchy toffee bits, perfect for any celebration.


Ingredients

  • 2 cups all-purpose flour
  • 3/4 cup unsweetened cocoa powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup softened butter
  • 2 cups granulated sugar
  • 4 large eggs
  • 1 cup buttermilk
  • 1 cup granulated sugar (for caramel-making)
  • 1/2 cup heavy cream
  • 1 cup softened butter (for frosting)
  • 4 cups powdered sugar
  • 1/2 cup caramel sauce
  • 1 cup toffee bits

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare your cake pans by greasing and lining them with parchment paper.
  2. Whisk together flour, cocoa powder, baking soda, and salt in a medium bowl. Set aside.
  3. In a large bowl, cream together the softened butter and granulated sugar using a mixer until light and fluffy.
  4. Add eggs one at a time, mixing well after each addition. Then blend in buttermilk until smooth.
  5. Gradually fold in the dry ingredients until just mixed.
  6. Divide the batter evenly between prepared pans and smooth the tops.
  7. Bake for 25–30 minutes, or until a toothpick inserted comes out clean.
  8. Let cakes cool in pans for 10 minutes before transferring to a cooling rack to cool completely.
  9. Prepare the caramel by melting 1 cup of granulated sugar over medium heat until golden amber. Remove from heat, whisk in heavy cream until combined, and let cool.
  10. In a separate bowl, beat together softened butter and powdered sugar until fluffy. Add cooled caramel sauce and mix until combined.
  11. Assemble the cake by placing one layer on a serving plate, spreading with caramel frosting, sprinkling with toffee bits, then adding the second layer. Frost the top and sides with remaining frosting and garnish with more toffee bits.

Notes

Make ahead by baking layers a day in advance. Store tightly wrapped. For less sweetness, reduce sugar in frosting.
