Description

A refreshing twist on classic tiramisu featuring layers of juicy peaches and creamy mascarpone.


Ingredients

  • 4 cups pitted and sliced fresh peaches (about 1.5 lbs)
  • 1 cup water
  • 1 cup granulated sugar
  • 1 tablespoon lemon juice
  • 1 ½ cups heavy cream
  • 16 ounces mascarpone cheese
  • ¾ cup granulated sugar
  • ⅔ cup peach syrup
  • 1 teaspoon vanilla
  • 1 teaspoon almond extract
  • 1 (7 oz) package Savoiardi ladyfingers (about 24)

Instructions

  1. Combine water and sugar in a medium saucepan. Stir over medium heat until sugar dissolves.
  2. Add sliced peaches and lemon juice. Simmer gently for about 15 minutes, then strain the syrup and let it cool.
  3. Whip the heavy cream in a large bowl until soft peaks form.
  4. Mix mascarpone cheese, sugar, vanilla, and almond extract in another bowl until smooth.
  5. Fold the whipped cream into the mascarpone mixture until no streaks remain.
  6. Dip ladyfingers quickly in the cooled peach syrup and layer them in a baking pan.
  7. Spread half of the peach filling over the ladyfingers.
  8. Repeat with another layer of soaked ladyfingers and the remaining filling, smoothing it out.
  9. Cover and refrigerate for at least 4 hours before serving.

Notes

Make-ahead tips: Prepare a day in advance for improved flavor. Serve with fresh mint or whipped cream for added richness.
