Description
A refreshing twist on classic tiramisu featuring layers of juicy peaches and creamy mascarpone.
Ingredients

- 4 cups pitted and sliced fresh peaches (about 1.5 lbs)
- 1 cup water
- 1 cup granulated sugar
- 1 tablespoon lemon juice
- 1 ½ cups heavy cream
- 16 ounces mascarpone cheese
- ¾ cup granulated sugar
- ⅔ cup peach syrup
- 1 teaspoon vanilla
- 1 teaspoon almond extract
- 1 (7 oz) package Savoiardi ladyfingers (about 24)
Instructions
- Combine water and sugar in a medium saucepan. Stir over medium heat until sugar dissolves.
- Add sliced peaches and lemon juice. Simmer gently for about 15 minutes, then strain the syrup and let it cool.
- Whip the heavy cream in a large bowl until soft peaks form.
- Mix mascarpone cheese, sugar, vanilla, and almond extract in another bowl until smooth.
- Fold the whipped cream into the mascarpone mixture until no streaks remain.
- Dip ladyfingers quickly in the cooled peach syrup and layer them in a baking pan.
- Spread half of the peach filling over the ladyfingers.
- Repeat with another layer of soaked ladyfingers and the remaining filling, smoothing it out.
- Cover and refrigerate for at least 4 hours before serving.
Notes
Make-ahead tips: Prepare a day in advance for improved flavor. Serve with fresh mint or whipped cream for added richness.
