Description

Baked Feta Potatoes are a vibrant and flavorful dish that combines golden-baked potatoes with creamy feta and sweet cherry tomatoes, delivering a taste of the Mediterranean.


Ingredients

  • 1.5 lbs (700 g) baby potatoes, halved
  • 200 g (7 oz) block feta cheese
  • 3 tbsp olive oil
  • 1 tsp dried oregano
  • 1 tsp garlic powder
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1 cup (150 g) cherry tomatoes, halved
  • 1/4 cup (35 g) pitted kalamata olives (optional)
  • Fresh basil or parsley, for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Line a baking sheet with parchment paper.
  3. In a large bowl, toss the halved potatoes with olive oil, dried oregano, garlic powder, salt, and pepper.
  4. Spread the potatoes evenly on the baking sheet.
  5. Place the block of feta in the center of the baking sheet, surrounded by cherry tomatoes and olives.
  6. Bake for 25–30 minutes, or until the potatoes reach tenderness and a slightly golden hue.
  7. Remove from the oven and gently mash the feta with a fork, mixing with the tomatoes and potatoes.
  8. Garnish with fresh basil or parsley and serve warm.

Notes

Make ahead by prepping the ingredients in advance and storing them in the refrigerator until ready to bake.
