Baked Feta Potatoes are a vibrant and flavorful dish that combines golden-baked potatoes with creamy feta and sweet cherry tomatoes, delivering a taste of the Mediterranean.

- 1.5 lbs (700 g) baby potatoes, halved
- 200 g (7 oz) block feta cheese
- 3 tbsp olive oil
- 1 tsp dried oregano
- 1 tsp garlic powder
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1 cup (150 g) cherry tomatoes, halved
- 1/4 cup (35 g) pitted kalamata olives (optional)
- Fresh basil or parsley, for garnish
Instructions
- Preheat your oven to 400°F (200°C).
- Line a baking sheet with parchment paper.
- In a large bowl, toss the halved potatoes with olive oil, dried oregano, garlic powder, salt, and pepper.
- Spread the potatoes evenly on the baking sheet.
- Place the block of feta in the center of the baking sheet, surrounded by cherry tomatoes and olives.
- Bake for 25–30 minutes, or until the potatoes reach tenderness and a slightly golden hue.
- Remove from the oven and gently mash the feta with a fork, mixing with the tomatoes and potatoes.
- Garnish with fresh basil or parsley and serve warm.
Notes
