Ingredients

  • 1 French baguette
  • 1 cup cooked and shredded pork (or chicken or tofu)
  • 1/2 cucumber, thinly sliced
  • 1 carrot, julienned
  • 1 daikon radish, julienned
  • Fresh cilantro leaves
  • 2 tablespoons mayonnaise
  • 1 tablespoon sriracha
  • Soy sauce to taste
  • Pickled jalapeños (optional)
  • Salt and pepper to taste

Instructions

  1. Slice the baguette in half lengthwise to create a pocket for the fillings.
  2. Spread mayonnaise on both sides of the baguette, and drizzle with sriracha and soy sauce.
  3. Layer shredded meat (or tofu) on the bottom half of the baguette.
  4. Add the cucumber, carrots, daikon radish, and cilantro leaves generously.
  5. Include pickled jalapeños if desired, and season with salt and pepper to taste.
  6. Close the sandwich and cut it in half.
  7. Serve immediately and enjoy.
