- 4 slices thick-cut bacon
- 1 tbsp butter
- 1 tbsp honey
- 1/4 tsp chile flakes
- 3 1/2-inch thick slices fresh pineapple
- 1/2 recipe artisan pizza dough
- 1/3 cup pizza sauce
- 4 oz shredded low-moisture mozzarella
- 2 oz prosciutto, torn into bite-sized pieces
- 1/4 cup pickled jalapeños
Instructions
- Place your pizza steel or stone in the oven and preheat to 500°F for 45 minutes.
- Flour your pizza peel generously to prevent sticking.
- Cook the bacon slices in a large cast iron skillet over medium heat until golden brown and crispy, about 15 minutes.
- Transfer the bacon to a paper towel-lined plate, leaving 1 tablespoon of grease in the pan.
- Add butter, honey, and chile flakes to the pan, stirring until melted.
- Increase the heat and add the pineapple slices, cooking until golden brown, about 4-5 minutes.
- Flip the pineapple slices and cook for another 5 minutes until tender and caramelized.
- Chop the pineapple and set aside.
- Flatten the dough ball into a large disk, stretching it into a 12-inch circle.
- Spread pizza sauce over the dough, leaving a 1/2-inch border.
- Sprinkle mozzarella evenly over the sauce, then add caramelized pineapple, bacon, and prosciutto.
- Slide the pizza onto the steel and bake for 5 minutes.
- Turn on the broiler and broil for an additional 2-4 minutes.
- Cool slightly, then top with pickled jalapeños before slicing and serving.
Notes
You can use turkey bacon for a lighter option or omit the meats for a vegetarian version. Experiment with different toppings like bell peppers or fresh basil.
