Description

Decadent cookies infused with chocolate, filled with a silky mousse, and topped with whipped cream and chocolate curls.


Ingredients

  • 1 cup Unsalted Butter, melted and cooled
  • 1 cup Brown Sugar, packed
  • 1/2 cup White Granulated Sugar
  • 2 Large Eggs, room temperature
  • 1 Egg Yolk, room temperature
  • 1 tsp Pure Vanilla Extract
  • 2 3/4 cups All-Purpose Flour
  • 3/4 cup Unsweetened Cocoa Powder
  • 1/2 tsp Baking Powder
  • 1/2 tsp Baking Soda
  • 1 tsp Salt
  • 2 cups Oreo Crumbs
  • 3.4 oz Chocolate Instant Pudding Mix
  • 2/3 cup Milk
  • 1 1/2 cups Heavy Cream
  • 2/3 cup Powdered Sugar
  • 1 tbsp Powdered Sugar
  • 1/8 cup Unsweetened Cocoa Powder
  • 1 tsp Pure Vanilla Extract (for mousse)
  • Chocolate Curls (for garnish)

Instructions

  1. Preheat oven to 350°F (175°C) and prepare baking sheets with parchment paper.
  2. In a mixer, beat melted butter, brown sugar, and white sugar until creamy and fluffy.
  3. Add eggs, egg yolk, and vanilla extract, mixing until smooth.
  4. In a separate bowl, sift together flour, cocoa powder, baking powder, baking soda, and salt.
  5. Gradually add dry ingredients and Oreo crumbs to the wet mixture until combined.
  6. Let the dough rest for 10 minutes.
  7. Use a large cookie scoop to portion out dough onto the baking sheets.
  8. Bake cookies for 11 minutes, then create wells in each with a measuring cup.
  9. Return cookies to oven for an additional 2 minutes.
  10. Let cookies cool for 5 minutes before transferring to a wire rack.
  11. Chill mixing bowls and whip cream with powdered sugar, cocoa, and vanilla until stiff peaks form.
  12. Whisk together pudding mix and milk until smooth and set aside.
  13. Fold pudding into whipped cream gently to maintain airiness.
  14. Prepare whipped cream topping and add to cookies with a scoop of mousse.
  15. Garnish with chocolate curls and refrigerate for a couple of hours before serving.

Notes

For best results, chill mixing bowls for whipped cream and let cookie dough rest before baking.
