- 1 cup Unsalted Butter, melted and cooled
- 1 cup Brown Sugar, packed
- 1/2 cup White Granulated Sugar
- 2 Large Eggs, room temperature
- 1 Egg Yolk, room temperature
- 1 tsp Pure Vanilla Extract
- 2 3/4 cups All-Purpose Flour
- 3/4 cup Unsweetened Cocoa Powder
- 1/2 tsp Baking Powder
- 1/2 tsp Baking Soda
- 1 tsp Salt
- 2 cups Oreo Crumbs
- 3.4 oz Chocolate Instant Pudding Mix
- 2/3 cup Milk
- 1 1/2 cups Heavy Cream
- 2/3 cup Powdered Sugar
- 1 tbsp Powdered Sugar
- 1/8 cup Unsweetened Cocoa Powder
- 1 tsp Pure Vanilla Extract (for mousse)
- Chocolate Curls (for garnish)
Instructions
- Preheat oven to 350°F (175°C) and prepare baking sheets with parchment paper.
- In a mixer, beat melted butter, brown sugar, and white sugar until creamy and fluffy.
- Add eggs, egg yolk, and vanilla extract, mixing until smooth.
- In a separate bowl, sift together flour, cocoa powder, baking powder, baking soda, and salt.
- Gradually add dry ingredients and Oreo crumbs to the wet mixture until combined.
- Let the dough rest for 10 minutes.
- Use a large cookie scoop to portion out dough onto the baking sheets.
- Bake cookies for 11 minutes, then create wells in each with a measuring cup.
- Return cookies to oven for an additional 2 minutes.
- Let cookies cool for 5 minutes before transferring to a wire rack.
- Chill mixing bowls and whip cream with powdered sugar, cocoa, and vanilla until stiff peaks form.
- Whisk together pudding mix and milk until smooth and set aside.
- Fold pudding into whipped cream gently to maintain airiness.
- Prepare whipped cream topping and add to cookies with a scoop of mousse.
- Garnish with chocolate curls and refrigerate for a couple of hours before serving.
Notes
For best results, chill mixing bowls for whipped cream and let cookie dough rest before baking.
