Description

Galentine’s Confetti Cupcakes are a delightful treat perfect for celebrating friendship with colorful sprinkles and a fluffy frosting.


Ingredients

  • 1 cup granulated sugar
  • ½ cup unsalted butter, softened
  • 2 large eggs
  • 1 tsp vanilla extract

  • ½ tsp baking soda

  • ½ cup rainbow sprinkles
  • 2 cups powdered sugar
  • 1 cup unsalted butter, softened (for frosting)
  • 23 tbsp heavy cream (for frosting)
  • 1 tsp vanilla extract (for frosting)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a cupcake pan with cupcake liners.
  2. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
  3. Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
  4. In another bowl, whisk together the flour, baking powder, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet mixture, alternating with the milk, and mix until just combined.
  6. Fold in the rainbow sprinkles gently.
  7. Divide the batter evenly among the cupcake liners, filling each about 2/3 full.
  8. Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
  9. Let the cupcakes cool completely before frosting.
  10. For the frosting, beat the softened butter until creamy, then gradually add the powdered sugar, heavy cream, and vanilla extract until smooth and fluffy.
  11. Frost the cooled cupcakes and top with additional sprinkles if desired.
