- 1 ½ cups all-purpose flour
- 1 cup granulated sugar
- ½ cup unsalted butter, softened
- 2 large eggs
- 1 tsp vanilla extract

- ½ cup rainbow sprinkles
- 2 cups powdered sugar
- 1 cup unsalted butter, softened (for frosting)
- 2–3 tbsp heavy cream (for frosting)
- 1 tsp vanilla extract (for frosting)
Instructions
- Preheat the oven to 350°F (175°C) and line a cupcake pan with cupcake liners.
- In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
- Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
- In another bowl, whisk together the flour, baking powder, baking soda, and salt.
- Gradually add the dry ingredients to the wet mixture, alternating with the milk, and mix until just combined.
- Fold in the rainbow sprinkles gently.
- Divide the batter evenly among the cupcake liners, filling each about 2/3 full.
- Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
- Let the cupcakes cool completely before frosting.
- For the frosting, beat the softened butter until creamy, then gradually add the powdered sugar, heavy cream, and vanilla extract until smooth and fluffy.
- Frost the cooled cupcakes and top with additional sprinkles if desired.
Notes
- Make sure the butter is at room temperature for easier mixing.
- For a fun twist, try using different colored sprinkles.
