Ingredients

Scale
  • 1.5 pounds Beef stew meat, cut into bite-sized pieces
  • 1 pound Baby potatoes, halved
  • 4 tablespoons Unsalted butter, melted
  • 3 cloves Garlic, minced
  • 1 teaspoon Onion powder
  • 1 teaspoon Smoked paprika
  • 0.5 teaspoon Dried thyme
  • 0.5 teaspoon Dried rosemary
  • 0.5 teaspoon Salt, or to taste
  • 0.25 teaspoon Black pepper
  • 0.25 cup Beef broth

Instructions

  1. Prep ingredients: Gather all your ingredients, cutting the beef into bite-sized pieces and halving the baby potatoes for even cooking.
  2. Optional step: Parboil the halved baby potatoes for about 5 minutes.
  3. Sear the beef: Heat olive oil in a large skillet over medium-high heat. Add the beef bites in a single layer, searing until browned.
  4. Prepare the garlic butter sauce: In a small bowl, combine melted butter with minced garlic and spices. Stir well.
  5. Assemble in slow cooker: Layer the halved baby potatoes in the slow cooker. Add the seared beef bites and drizzle the garlic butter sauce over them.
  6. Slow cook: Cover and cook on low for 6-8 hours or on high for 3-4 hours until the beef is fork-tender.
  7. Rest and serve: Let the dish rest for about 10 minutes before serving.
