Description

A comforting dish featuring succulent beef and tender baby potatoes coated in rich garlic butter.


Ingredients

  • 1.5 pounds Beef stew meat (Cut into bite-sized pieces)
  • 1 pound Baby potatoes (Halved)
  • 4 tablespoons Unsalted butter (Melted)
  • 3 cloves Garlic (Minced)
  • 1 teaspoon Onion powder
  • 1 teaspoon Smoked paprika
  • 0.5 teaspoon Dried thyme
  • 0.5 teaspoon Dried rosemary
  • 0.5 teaspoon Salt (Or to taste)
  • 0.25 teaspoon Black pepper
  • 0.25 cup Beef broth
  • 1 tablespoon Olive oil

Instructions

  1. Gather all your ingredients and cut the beef into even bite-sized pieces.
  2. Halve the baby potatoes.
  3. Optional: Parboil the potatoes until tender.
  4. Heat olive oil in a skillet over medium-high heat and sear the beef until browned.
  5. In a small bowl, mix melted butter, minced garlic, onion powder, smoked paprika, thyme, rosemary, salt, and pepper.
  6. In the slow cooker, add potatoes and seared beef.
  7. Pour the garlic butter sauce and beef broth over the top.
  8. Cover and cook on low for 6-8 hours or high for 3-4 hours until fork-tender.
  9. Let the dish rest for 10 minutes before serving.

Notes

Consider adding chili flakes for a spicy kick or lemon zest for a tangy twist. This dish can also be made without a slow cooker by simmering on the stovetop.
