Description

A delightful pasta dish featuring tender shrimp in a luscious garlic butter sauce, evoking comfort and joy with every bite.


Ingredients

  • 1 pound large shrimp, peeled and deveined
  • 8 ounces spaghetti or linguine
  • 2 tablespoons butter
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 2 tablespoons fresh parsley, chopped
  • Juice of 1 lemon
  • Salt and pepper, to taste

Instructions

  1. Cook the Pasta: Fill a large pot with water, bring it to a vigorous boil, and add a generous pinch of salt. Add your pasta, cooking it according to package directions until just al dente. Reserve about 1 cup of the pasta water, then drain the rest. Set aside.
  2. Sauté the Shrimp: In a large skillet over medium heat, warmth the olive oil and let it shimmer. Add the shrimp, seasoning with salt and pepper. Cook them for about 2-3 minutes per side, or until they turn pink and opaque. Remove them from the skillet and set aside.
  3. Prepare the Sauce: In the same skillet, melt the butter. Allow it to foam slightly before adding the minced garlic. Sauté the garlic for about 30 seconds until fragrant, stirring continuously to prevent burning.
  4. Combine: Add the drained pasta to the skillet, tossing it to coat in the garlic butter goodness. If the mixture seems dry, pour in a bit of the reserved pasta water. Add back the shrimp, parsley, and squeeze of lemon juice. Toss everything together gently until well combined.
  5. Serve: Plate your succulent garlic butter shrimp pasta immediately, garnishing with additional fresh parsley and a lemon wedge for zest.

Notes

Customize with veggies like cherry tomatoes or spinach for added nutrition. Make-ahead shrimp can be refrigerated for up to two days.
