- 4 Chicken Breasts, boneless and skinless
- 4 Medium Potatoes, Diced (Yukon Gold or red)
- 4 Tablespoons Butter
- 4 Cloves Garlic, Minced
- 1 Cup Parmesan Cheese, Grated
- Salt and Pepper to Taste
- Italian Seasoning (Optional)
- Fresh Parsley for Garnish (Optional)
Instructions
- Preheat the oven to 400°F (200°C).
- In a large skillet, melt the butter over medium heat.
- Add minced garlic and sauté for about 1 minute until fragrant.
- Season chicken breasts with salt, pepper, and optional Italian seasoning, then brown them in the skillet for 4-5 minutes on each side.
- Stir in diced potatoes, mixing well to coat with garlic butter.
- Sprinkle grated Parmesan over the chicken and potatoes.
- Transfer the skillet to the oven and bake for 25-30 minutes until chicken is at least 165°F (75°C) and potatoes are tender.
- Garnish with fresh parsley if desired before serving.
Notes
Make-ahead by preparing diced potatoes and marinated chicken ahead of time. Easily customizable by adding seasonal vegetables.
