Description

A rich and comforting dish featuring tender chicken breasts and golden potatoes, infused with garlic and topped with melted Parmesan cheese.


Ingredients

  • 4 Chicken Breasts, boneless and skinless
  • 4 Medium Potatoes, Diced (Yukon Gold or red)
  • 4 Tablespoons Butter
  • 4 Cloves Garlic, Minced
  • 1 Cup Parmesan Cheese, Grated
  • Salt and Pepper to Taste
  • Italian Seasoning (Optional)
  • Fresh Parsley for Garnish (Optional)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large skillet, melt the butter over medium heat.
  3. Add minced garlic and sauté for about 1 minute until fragrant.
  4. Season chicken breasts with salt, pepper, and optional Italian seasoning, then brown them in the skillet for 4-5 minutes on each side.
  5. Stir in diced potatoes, mixing well to coat with garlic butter.
  6. Sprinkle grated Parmesan over the chicken and potatoes.
  7. Transfer the skillet to the oven and bake for 25-30 minutes until chicken is at least 165°F (75°C) and potatoes are tender.
  8. Garnish with fresh parsley if desired before serving.

Notes

Make-ahead by preparing diced potatoes and marinated chicken ahead of time. Easily customizable by adding seasonal vegetables.
