Description

A healthy and satisfying casserole that replaces traditional pizza crust with layers of zucchini, filled with ground meat, marinara, and cheese.


Ingredients

Scale
  • 2 medium zucchinis
  • 1 lb ground meat (beef, turkey, or chicken)
  • 1 cup marinara sauce
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated parmesan cheese
  • 1 bell pepper, diced
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Slice the zucchinis thinly and set aside.
  3. Cook the ground meat in a large skillet over medium heat until browned; drain excess fat.
  4. Add diced bell pepper, chopped onion, and minced garlic; sauté until tender.
  5. Stir in marinara sauce and Italian seasoning; season with salt and pepper.
  6. Create your first layer in a greased baking dish with zucchini slices, followed by the meat mixture.
  7. Sprinkle mozzarella and parmesan cheese on top.
  8. Repeat layers until ingredients are used up, finishing with cheese.
  9. Bake for 25-30 minutes until bubbly and golden.
  10. Allow to cool for a few minutes before serving.

Notes

This dish is gluten-free and can be customized with additional veggies. Assemble ahead of time and bake later.
