Description
A healthy and satisfying casserole that replaces traditional pizza crust with layers of zucchini, filled with ground meat, marinara, and cheese.
Ingredients

- 2 medium zucchinis
- 1 lb ground meat (beef, turkey, or chicken)
- 1 cup marinara sauce
- 1 cup shredded mozzarella cheese
- 1/2 cup grated parmesan cheese
- 1 bell pepper, diced
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- Slice the zucchinis thinly and set aside.
- Cook the ground meat in a large skillet over medium heat until browned; drain excess fat.
- Add diced bell pepper, chopped onion, and minced garlic; sauté until tender.
- Stir in marinara sauce and Italian seasoning; season with salt and pepper.
- Create your first layer in a greased baking dish with zucchini slices, followed by the meat mixture.
- Sprinkle mozzarella and parmesan cheese on top.
- Repeat layers until ingredients are used up, finishing with cheese.
- Bake for 25-30 minutes until bubbly and golden.
- Allow to cool for a few minutes before serving.
Notes
This dish is gluten-free and can be customized with additional veggies. Assemble ahead of time and bake later.
