Description

Delicious chicken rolls stuffed with creamy herbed ricotta, perfect for a cozy dinner or elegant gathering.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup ricotta cheese
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh basil, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon Italian seasoning
  • 1 cup marinara sauce
  • 1 tablespoon olive oil

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a mixing bowl, combine ricotta cheese, Parmesan, parsley, basil, garlic, salt, pepper, and Italian seasoning.
  3. Flatten each chicken breast to an even thickness using a meat mallet.
  4. Spread the ricotta mixture evenly over each chicken breast.
  5. Roll up each chicken breast tightly and secure it with toothpicks.
  6. Heat olive oil in a skillet over medium heat and sear the chicken rolls until golden brown.
  7. Transfer the chicken rolls to a baking dish and pour marinara sauce over them.
  8. Bake in the preheated oven for 25-30 minutes until the internal temperature reaches 165°F (75°C).
  9. Remove toothpicks before serving.

Notes

Perfect for meal prepping. You can prepare the chicken rolls a day ahead and bake right before serving.
