Description

A delightful salad combining crunchy bacon, tender chicken, and zesty jalapeños in a creamy dressing, perfect for a nutritious meal.


Ingredients

  • 3 cups cooked shredded chicken
  • 4 jalapeños, diced
  • 6 slices bacon, cooked & crumbled
  • 1 cup Greek yogurt (or light mayo)
  • 2 oz cream cheese, softened
  • 1 cup shredded cheddar cheese
  • ½ tsp garlic powder
  • ½ tsp paprika
  • Salt & pepper to taste
  • Fresh herbs (parsley or chives) for garnish

Instructions

  1. Cook & shred chicken: Use either rotisserie or poach fresh breasts and shred into bite-sized pieces.
  2. Prep jalapeños: Dice your jalapeños according to your spice preference, fresh or pickled.
  3. Make dressing: In a mixing bowl, whisk Greek yogurt, softened cream cheese, garlic powder, paprika, salt, and pepper until smooth.
  4. Add mix-ins: Gently fold shredded chicken, crispy bacon, cheddar cheese, and diced jalapeños into the dressing.
  5. Chill & serve: Refrigerate for about 30 minutes and garnish with fresh herbs before serving.
