Instructions
- Preheat the oven to 400°F (200°C).
- Roll out the puff pastry on a floured surface and cut into squares.
- In a bowl, mix blueberries, lemon juice, and sugar.
- Place a spoonful of the blueberry mixture in the center of each pastry square.
- Fold the corners of the pastry over the filling to create a pocket.
- Brush the tops with beaten egg for a golden finish.
- Bake for 15-20 minutes or until golden brown.
- Let cool slightly and dust with powdered sugar before serving.
