Description

Delicious red velvet brownie bites with a creamy cream cheese filling, perfect for any celebration or sweet craving.


Ingredients

  • 9 tbsp unsalted butter
  • 1 1/4 cups sugar
  • 1/4 cup cocoa powder (sifted)
  • 1/2 tsp vanilla extract
  • 1 tbsp red food coloring
  • 1/8 tsp salt
  • 1/4 tsp espresso powder
  • 1/2 tsp vinegar
  • 2 eggs
  • 3/4 cup all-purpose flour
  • 9 oz cream cheese (room temperature)
  • 3 tbsp sugar (for filling)
  • 1/2 tsp vanilla extract (for filling)
  • 1 egg yolk (for filling)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Melt the butter in a mixing bowl and let it cool slightly.
  3. Add sugar, sifted cocoa powder, vanilla extract, red food coloring, salt, espresso powder, vinegar, and eggs to the melted butter. Whisk until combined.
  4. Gently fold in the flour.
  5. Prepare your baking pan with parchment paper and pour the brownie batter in.
  6. In a separate bowl, beat cream cheese, sugar, vanilla extract, and egg yolk until fluffy.
  7. Spoon dollops of the cream cheese filling onto the brownie batter and swirl gently.
  8. Bake for 25-30 minutes, or until a toothpick comes out with a few moist crumbs.
  9. Allow to cool completely, then lift them out using the parchment overhang and cut into bite-size pieces.

Notes

For a dairy-free version, use coconut oil instead of butter and nut-based cream cheese. Consider adding mini chocolate chips or nuts for texture.
