Delicious red velvet brownie bites with a creamy cream cheese filling, perfect for any celebration or sweet craving.

- 9 tbsp unsalted butter
- 1 1/4 cups sugar
- 1/4 cup cocoa powder (sifted)
- 1/2 tsp vanilla extract
- 1 tbsp red food coloring
- 1/8 tsp salt
- 1/4 tsp espresso powder
- 1/2 tsp vinegar
- 2 eggs
- 3/4 cup all-purpose flour
- 9 oz cream cheese (room temperature)
- 3 tbsp sugar (for filling)
- 1/2 tsp vanilla extract (for filling)
- 1 egg yolk (for filling)
Instructions
- Preheat your oven to 350°F (175°C).
- Melt the butter in a mixing bowl and let it cool slightly.
- Add sugar, sifted cocoa powder, vanilla extract, red food coloring, salt, espresso powder, vinegar, and eggs to the melted butter. Whisk until combined.
- Gently fold in the flour.
- Prepare your baking pan with parchment paper and pour the brownie batter in.
- In a separate bowl, beat cream cheese, sugar, vanilla extract, and egg yolk until fluffy.
- Spoon dollops of the cream cheese filling onto the brownie batter and swirl gently.
- Bake for 25-30 minutes, or until a toothpick comes out with a few moist crumbs.
- Allow to cool completely, then lift them out using the parchment overhang and cut into bite-size pieces.
Notes
For a dairy-free version, use coconut oil instead of butter and nut-based cream cheese. Consider adding mini chocolate chips or nuts for texture.
