Description

A delightful combination of grilled chicken marinated in honey and lime, layered with creamy avocado and fluffy jasmine rice, creating a visually stunning and delicious dish.


Ingredients

  • 2 boneless, skinless chicken breasts
  • 1/4 cup honey
  • Juice of 2 limes & zest of 1 lime
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • Salt and pepper to taste
  • 1 cup jasmine rice
  • 2 cups chicken broth
  • 1 avocado, diced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh cilantro, chopped
  • 1 tablespoon olive oil
  • Lime wedges for serving

Instructions

  1. Prepare the marinade: In a mixing bowl, combine honey, lime juice, lime zest, minced garlic, ground cumin, salt, and pepper. Whisk until blended.
  2. Marinate the chicken: Place chicken breasts in a resealable bag, pour marinade over, seal, and refrigerate for 30 minutes to 2 hours.
  3. Cook the rice: Rinse jasmine rice under cold water, then bring chicken broth to a boil in a saucepan, add rice, cover, and simmer for 15 minutes.
  4. Heat the grill: Preheat a grill or grill pan to medium-high heat.
  5. Grill the chicken: Remove chicken from marinade and grill for 6-7 minutes per side until fully cooked.
  6. Prepare the avocado mixture: In a bowl, combine diced avocado, red onion, cilantro, and olive oil; gently mix.
  7. Assemble the stack: Layer rice, then sliced chicken, and finally the avocado mixture on top.
  8. Serve with lime wedges for an extra burst of flavor.

Notes

Make the marinade in advance and marinate the chicken overnight for deeper flavor. Store the avocado mixture separately to prevent browning.
