Instructions
- Preheat your oven to 350°F (175°C).
- Prepare the Medjool dates by carefully pitting them.
- Combine ricotta cheese, honey, vanilla extract, and salt in a mixing bowl.
- Chop the pistachios and fold them into the ricotta mixture.
- Stuff each date with the ricotta-pistachio mixture.
- Place stuffed dates on a baking sheet.
- Bake for 5-7 minutes until warm.
- Drizzle with extra honey before serving warm.
