Description

Warm and comforting breakfast enchiladas filled with scrambled eggs and sausage, topped with creamy gravy and melted cheese.


Ingredients

  • 1 lb crumbled sausage
  • 6 large eggs
  • 8 pieces flour tortillas
  • 2 cups milk
  • 1/4 cup flour
  • 2 tbsp butter
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt and pepper to taste
  • 1 cup shredded cheddar cheese

Instructions

  1. Sauté the sausage in a skillet over medium heat until crispy and golden, about 5-7 minutes.
  2. Whisk the eggs in a bowl until fluffy, then pour into the skillet with the sausage, stirring for 3-4 minutes until slightly soft.
  3. In a saucepan, melt the butter over medium heat. Whisk in the flour for 1-2 minutes until golden, then gradually add milk, stirring until thick, about 5 minutes.
  4. Assemble the enchiladas with the sausage and egg mixture wrapped in tortillas and place in a greased baking dish.
  5. Drizzle gravy over the enchiladas and top with shredded cheese.
  6. Bake in a preheated oven at 350°F for 20-25 minutes until bubbly and golden. Let rest for 5 minutes before serving.

Notes

Feel free to substitute sausage for turkey or use dairy-free cheese for a lighter option. Prepare sausage and egg mixture a day in advance for quicker assembly.
