- 1 lb crumbled sausage
- 6 large eggs
- 8 pieces flour tortillas
- 2 cups milk
- 1/4 cup flour
- 2 tbsp butter
- 1 tsp garlic powder
- 1 tsp onion powder
- Salt and pepper to taste
- 1 cup shredded cheddar cheese
Instructions
- Sauté the sausage in a skillet over medium heat until crispy and golden, about 5-7 minutes.
- Whisk the eggs in a bowl until fluffy, then pour into the skillet with the sausage, stirring for 3-4 minutes until slightly soft.
- In a saucepan, melt the butter over medium heat. Whisk in the flour for 1-2 minutes until golden, then gradually add milk, stirring until thick, about 5 minutes.
- Assemble the enchiladas with the sausage and egg mixture wrapped in tortillas and place in a greased baking dish.
- Drizzle gravy over the enchiladas and top with shredded cheese.
- Bake in a preheated oven at 350°F for 20-25 minutes until bubbly and golden. Let rest for 5 minutes before serving.
Notes
Feel free to substitute sausage for turkey or use dairy-free cheese for a lighter option. Prepare sausage and egg mixture a day in advance for quicker assembly.
