Description

A refreshing and zesty pasta salad featuring cherry tomatoes, fresh basil, and a bright lemon dressing, perfect for summer gatherings.


Ingredients

  • 8 oz pasta (e.g., rotini or fusilli)
  • 1 cup cherry tomatoes, halved
  • 1/2 cup fresh basil leaves, chopped
  • 1/4 cup red onion, finely diced
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon lemon zest
  • Salt and pepper to taste

Instructions

  1. Cook the pasta by boiling water in a large pot. Add salt and then the pasta. Cook until al dente; drain and cool.
  2. Combine the cooled pasta, cherry tomatoes, basil, and red onion in a mixing bowl and stir.
  3. Make the dressing by whisking together olive oil, lemon juice, lemon zest, salt, and pepper in a smaller bowl.
  4. Toss the dressing over the pasta salad and mix together until evenly coated.
  5. Serve chilled or at room temperature; allowing it to chill for 30 minutes helps the flavors meld.

Notes
