Description

  • 1 pound ground turkey
  • ½ cup Italian breadcrumbs or blanched almond flour
  • ¾ cup yellow onion, chopped
  • 1 large egg
  • 2 teaspoons garlic, minced
  • ½ teaspoon kosher salt
  • ¼ teaspoon black pepper
  • Chopped cucumbers
  • Kalamata olives
  • Tzatziki sauce
  • Fresh dill
  • Lemon wedges or slices
  • Cooked rice or pearl couscous

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a mixing bowl, combine the ground turkey, breadcrumbs (or almond flour), chopped onion, minced garlic, egg, salt, and pepper. Mix until well combined.
  3. Shape the mixture into meatballs about the size of golf balls. Place them on a lined baking sheet with space between each meatball.
  4. Bake in the preheated oven for approximately 15 minutes. For extra crispness, broil for an additional 2-3 minutes until golden brown.
  5. While the meatballs bake, prepare your rice or couscous according to package instructions and chop the cucumbers.
  6. Assemble your bowl with a base of rice or couscous, topped with meatballs, cucumbers, and tzatziki sauce.
  7. Garnish with fresh dill and lemon wedges before serving.
