Description

Delicious Mediterranean quesadillas filled with creamy feta, mozzarella, fresh spinach, and vibrant vegetables, perfect for any occasion.


Ingredients

  • 4 flour tortillas
  • 1 cup fresh spinach (chopped)
  • 1/2 cup shredded mozzarella cheese
  • 1/2 cup crumbled feta cheese
  • 1 small tomato (diced)
  • 1/4 cup red onion (thinly sliced)
  • 1 tablespoon olive oil
  • Black pepper (to taste)

Instructions

  1. Prepare the filling: In a mixing bowl, combine the shredded mozzarella, crumbled feta, chopped spinach, diced tomato, sliced red onion, and black pepper. Mix well until everything is evenly distributed.
  2. Build your quesadilla: Lay one tortilla flat on a clean surface. Spoon one-fourth of the filling mixture onto one half of the tortilla and fold the other half over the filling, creating a taco shape.
  3. Heat and cook: Preheat your non-stick skillet over medium heat and drizzle in the olive oil. Once hot, carefully place the folded quesadilla in the skillet.
  4. Cook for about 3-4 minutes until the bottom turns a beautiful golden brown and the cheese begins to melt. Use your spatula to gently flip the quesadilla and cook for an additional 3-4 minutes on the other side until both sides are crispy and golden.
  5. Serve and enjoy: Remove the quesadilla from the skillet, slice it into wedges, and serve warm, either plain or with your favorite dipping sauces.
