- 4 medium sweet potatoes
- 1 cup cooked quinoa
- 1 cup cherry tomatoes, halved
- 1 cup chickpeas, drained and rinsed
- 1/2 cup feta cheese, crumbled
- 1/4 cup Kalamata olives, sliced
- 1/4 cup fresh parsley, chopped
- 2 tablespoons olive oil
- 1 teaspoon dried oregano
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- Wash and pierce the sweet potatoes with a fork, then place them on a baking sheet.
- Bake the sweet potatoes for 45-60 minutes, or until tender.
- While the sweet potatoes are baking, prepare the filling by combining quinoa, cherry tomatoes, chickpeas, feta cheese, olives, parsley, olive oil, oregano, salt, and pepper in a bowl.
- Once the sweet potatoes are cooked, remove them from the oven and let them cool slightly.
- Slice the sweet potatoes in half lengthwise and scoop out a small portion of the flesh to create space for the filling.
- Fill each sweet potato half with the Mediterranean mixture.
- Return the stuffed sweet potatoes to the oven for an additional 10 minutes.
- Serve warm, garnished with extra parsley if desired.
