Description

Mediterranean Stuffed Sweet Potatoes are a delicious and healthy dish filled with vibrant flavors and nutritious ingredients, perfect for a satisfying meal.


Ingredients

  • 4 medium sweet potatoes
  • 1 cup cooked quinoa
  • 1 cup cherry tomatoes, halved
  • 1 cup chickpeas, drained and rinsed
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup Kalamata olives, sliced
  • 1/4 cup fresh parsley, chopped
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash and pierce the sweet potatoes with a fork, then place them on a baking sheet.
  3. Bake the sweet potatoes for 45-60 minutes, or until tender.
  4. While the sweet potatoes are baking, prepare the filling by combining quinoa, cherry tomatoes, chickpeas, feta cheese, olives, parsley, olive oil, oregano, salt, and pepper in a bowl.
  5. Once the sweet potatoes are cooked, remove them from the oven and let them cool slightly.
  6. Slice the sweet potatoes in half lengthwise and scoop out a small portion of the flesh to create space for the filling.
  7. Fill each sweet potato half with the Mediterranean mixture.
  8. Return the stuffed sweet potatoes to the oven for an additional 10 minutes.
  9. Serve warm, garnished with extra parsley if desired.
