- 1 cup buttermilk
- 2 cups all-purpose flour
- 3 cups vegetable or peanut oil (for frying)
- 1/2 cup cayenne pepper
- 1/4 cup light brown sugar
- 2 tablespoons smoked paprika
- 4 brioche buns
- Dill pickle chips (for serving)
Instructions
- Marinate the chicken in buttermilk for at least 30 minutes.
- Heat the oil in a Dutch oven or deep pot to 325°F (160°C).
- Dredge the marinated chicken in the seasoned flour mixture and fry for 6-8 minutes per side until golden brown and cooked through.
- Prepare the hot sauce by mixing hot frying oil, cayenne pepper, brown sugar, and smoked paprika in a bowl.
- Assemble the sandwich by dipping fried chicken in hot sauce, placing it on a toasted brioche bun, and topping with dill pickle chips before serving.
Notes
For a lighter version, use an air fryer or bake the chicken in the oven at 425°F (220°C). Marinate overnight for maximum flavor. Adjust the cayenne pepper to control the heat level.
