Description

Ingredients

  • 1 pound gnocchi
  • 2 chicken breasts, cut into bite-sized pieces
  • 2 tablespoons olive oil
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 lemon, zested and juiced
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. In a large skillet over medium heat, add the olive oil and warm until shimmering.
  2. Toss in the bite-sized chicken pieces, season with salt and pepper, and cook until golden brown, about 5-7 minutes.
  3. Add the minced garlic and cook for another minute until fragrant.
  4. Pour in the chicken broth and heavy cream, then add the lemon juice and zest, stirring to combine.
  5. Gently add the gnocchi and cook according to package instructions, usually about 3-5 minutes, until they float.
  6. Remove from heat and stir in the grated Parmesan cheese until melted.
  7. Garnish with fresh parsley and serve immediately.
