Description
A comforting one-pan meal featuring tender chicken, creamy Parmesan sauce, and perfectly cooked rice, perfect for family gatherings or cozy dinners.
Ingredients
Scale
- 2 chicken breasts
- 1 cup long-grain white rice
- 2 cups chicken broth
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- 2 cloves garlic, minced
- Salt and pepper to taste
- 1 tablespoon olive oil
- 1 teaspoon Italian seasoning
- Fresh parsley for garnish
Instructions
- Heat olive oil in a large skillet over medium heat. Allow the oil to shimmer before adding in your chicken.
- Season the chicken breasts generously with salt, pepper, and Italian seasoning.
- Place the chicken in the hot skillet, and cook until golden brown on each side, approximately 4-5 minutes.
- Once cooked, remove the chicken from the skillet and set aside on a plate.
- In the same pan, add minced garlic and sauté for about 30 seconds.
- Add the rice to the skillet, stirring it in the remaining flavorful oil and garlic for about a minute to toast slightly.
- Pour in the chicken broth and heavy cream, stirring gently to combine.
- Bring the mixture to a lively simmer, then return the browned chicken to the skillet. Nestle the chicken into the rice mixture.
- Cover the pan with a lid, turning the heat to low, and cook for about 20 minutes, or until the rice is tender and the chicken is fully cooked through.
- Once ready, stir in the grated Parmesan cheese and garnish with fresh parsley before serving.
Notes
Consider marinating the chicken beforehand for deeper flavor. You can also customize with vegetables like spinach or peas.
