Description

An elevated take on the classic comfort food, this Parmesan Chicken Meatloaf features a crispy crust and tender, flavorful chicken.


Ingredients

Scale
  • 1 lb Ground Chicken
  • 1/2 cup Parmesan Cheese, grated
  • 1 cup Breadcrumbs
  • 2 Eggs
  • 2 cloves Garlic, minced
  • 1 small Onion, chopped
  • 1 tsp Salt
  • 1/2 tsp Pepper
  • Fresh Herbs (Basil, Parsley, or Thyme)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Mix the breadcrumbs and parmesan cheese in a medium bowl.
  3. Combine in a large bowl the ground chicken, soaked breadcrumb mixture, minced garlic, chopped onion, eggs, salt, and pepper. Mix until just combined.
  4. Transfer the mixture into a loaf pan, gently pressing down for an even shape.
  5. Sprinkle more parmesan cheese on top and drizzle with olive oil.
  6. Bake for 45-55 minutes, or until the internal temperature reaches 165°F (75°C).
  7. Rest for 10-15 minutes before slicing.

Notes

Make-ahead by prepping the night before. Option to use turkey instead of chicken for a leaner option.
