An elevated take on the classic comfort food, this Parmesan Chicken Meatloaf features a crispy crust and tender, flavorful chicken.

- 1 lb Ground Chicken
- 1/2 cup Parmesan Cheese, grated
- 1 cup Breadcrumbs
- 2 Eggs
- 2 cloves Garlic, minced
- 1 small Onion, chopped
- 1 tsp Salt
- 1/2 tsp Pepper
- Fresh Herbs (Basil, Parsley, or Thyme)
Instructions
- Preheat your oven to 375°F (190°C).
- Mix the breadcrumbs and parmesan cheese in a medium bowl.
- Combine in a large bowl the ground chicken, soaked breadcrumb mixture, minced garlic, chopped onion, eggs, salt, and pepper. Mix until just combined.
- Transfer the mixture into a loaf pan, gently pressing down for an even shape.
- Sprinkle more parmesan cheese on top and drizzle with olive oil.
- Bake for 45-55 minutes, or until the internal temperature reaches 165°F (75°C).
- Rest for 10-15 minutes before slicing.
Notes
Make-ahead by prepping the night before. Option to use turkey instead of chicken for a leaner option.
