- 1 can refrigerated biscuit dough
- 4 large eggs
- 1 cup shredded cheddar cheese
- 1/2 cup cooked breakfast sausage or bacon, crumbled
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 2 tablespoons melted butter
- 1 tablespoon chopped parsley or chives (optional)
Instructions
- Preheat your oven to 375°F (190°C).
- Whisk together the eggs with salt and pepper in a bowl.
- Cook the eggs in a non-stick skillet over medium heat until desired doneness.
- Cook the sausage or bacon in the same skillet until crispy, then crumble it.
- Flatten each biscuit into a disk about 4 inches in diameter.
- Fill each dough round with a spoonful of scrambled eggs, cheese, and crumbled meat.
- Pinch the edges to seal and form a ball shape.
- Place the balls seam-side down on a lined baking sheet.
- Brush the tops with melted butter.
- Bake for 15-18 minutes until golden brown.
- Cool for a few minutes before serving.
Notes
Assemble the breakfast bombs the night before and refrigerate, then bake in the morning for convenience.
