Description

Delicious breakfast bombs filled with scrambled eggs, gooey cheddar cheese, and savory bacon or sausage, all wrapped in a golden biscuit shell.


Ingredients

  • 1 can refrigerated biscuit dough
  • 4 large eggs
  • 1 cup shredded cheddar cheese
  • 1/2 cup cooked breakfast sausage or bacon, crumbled
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 tablespoons melted butter
  • 1 tablespoon chopped parsley or chives (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Whisk together the eggs with salt and pepper in a bowl.
  3. Cook the eggs in a non-stick skillet over medium heat until desired doneness.
  4. Cook the sausage or bacon in the same skillet until crispy, then crumble it.
  5. Flatten each biscuit into a disk about 4 inches in diameter.
  6. Fill each dough round with a spoonful of scrambled eggs, cheese, and crumbled meat.
  7. Pinch the edges to seal and form a ball shape.
  8. Place the balls seam-side down on a lined baking sheet.
  9. Brush the tops with melted butter.
  10. Bake for 15-18 minutes until golden brown.
  11. Cool for a few minutes before serving.

Notes

Assemble the breakfast bombs the night before and refrigerate, then bake in the morning for convenience.
