- 1 lb smoked sausage, sliced
- 1 lb pork shoulder, cubed
- 1 lb sauerkraut, drained and rinsed
- 1 small head of cabbage, chopped
- 1 cup prunes, chopped
- 2 onions, chopped
- 3 cloves garlic, minced
- 2 cups beef broth
- 1 tablespoon paprika
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- In a large skillet, heat the olive oil over medium heat. Add the chopped onions and minced garlic, cooking until tender and fragrant.
- In your slow cooker, place the sautéed onions and garlic at the bottom. Follow with the sliced smoked sausage, cubed pork shoulder, drained sauerkraut, chopped cabbage, and chopped prunes.
- Pour in the beef broth, then sprinkle the smoked paprika, salt, and pepper over the top. Stir gently to combine all ingredients.
- Cover the slow cooker and set on low for 6-8 hours, or until the meat is fork-tender.
- Once cooked, ladle the stew into bowls and enjoy.
