Description

A comforting and hearty stew featuring smoked sausage, pork shoulder, sauerkraut, and prunes, cooked slowly to meld rich flavors.


Ingredients

  • 1 lb smoked sausage, sliced
  • 1 lb pork shoulder, cubed
  • 1 lb sauerkraut, drained and rinsed
  • 1 small head of cabbage, chopped
  • 1 cup prunes, chopped
  • 2 onions, chopped
  • 3 cloves garlic, minced
  • 2 cups beef broth
  • 1 tablespoon paprika
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. In a large skillet, heat the olive oil over medium heat. Add the chopped onions and minced garlic, cooking until tender and fragrant.
  2. In your slow cooker, place the sautéed onions and garlic at the bottom. Follow with the sliced smoked sausage, cubed pork shoulder, drained sauerkraut, chopped cabbage, and chopped prunes.
  3. Pour in the beef broth, then sprinkle the smoked paprika, salt, and pepper over the top. Stir gently to combine all ingredients.
  4. Cover the slow cooker and set on low for 6-8 hours, or until the meat is fork-tender.
  5. Once cooked, ladle the stew into bowls and enjoy.
