Description

Southern Five Layer Beef Casserole is a hearty and comforting dish that combines layers of seasoned ground beef, creamy cheese, and flavorful vegetables, perfect for family dinners.


Ingredients

  • 1 lb ground beef
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 can (10 oz) diced tomatoes with green chilies
  • 2 cups shredded cheddar cheese
  • 1 cup sour cream
  • 1 package (8 oz) taco seasoning
  • 1 bag (12 oz) tortilla chips
  • 1/2 cup chopped green onions

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a skillet, cook the ground beef over medium heat until browned. Drain excess fat.
  3. Add taco seasoning to the beef and mix well.
  4. In a baking dish, layer half of the tortilla chips at the bottom.
  5. Spread half of the seasoned beef over the chips.
  6. Add a layer of black beans, corn, and diced tomatoes.
  7. Spread half of the sour cream and half of the cheddar cheese on top.
  8. Repeat the layers with the remaining ingredients.
  9. Top with the remaining cheddar cheese and green onions.
  10. Bake in the preheated oven for 25-30 minutes, or until the cheese is bubbly and golden.

Notes

  • Feel free to add other vegetables like bell peppers or jalapeños for extra flavor.
  • This casserole can be made ahead of time and refrigerated before baking.
  • Serve with a side salad for a complete meal.
