- 1 lb ground beef
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) corn, drained
- 1 can (10 oz) diced tomatoes with green chilies
- 2 cups shredded cheddar cheese
- 1 cup sour cream
- 1 package (8 oz) taco seasoning
- 1 bag (12 oz) tortilla chips
- 1/2 cup chopped green onions
Instructions
- Preheat the oven to 350°F (175°C).
- In a skillet, cook the ground beef over medium heat until browned. Drain excess fat.
- Add taco seasoning to the beef and mix well.
- In a baking dish, layer half of the tortilla chips at the bottom.
- Spread half of the seasoned beef over the chips.
- Add a layer of black beans, corn, and diced tomatoes.
- Spread half of the sour cream and half of the cheddar cheese on top.
- Repeat the layers with the remaining ingredients.
- Top with the remaining cheddar cheese and green onions.
- Bake in the preheated oven for 25-30 minutes, or until the cheese is bubbly and golden.
Notes
- Feel free to add other vegetables like bell peppers or jalapeños for extra flavor.
- This casserole can be made ahead of time and refrigerated before baking.
- Serve with a side salad for a complete meal.
