Description

A creamy and spicy pasta dish with tender chicken, sautéed vegetables, and a smoky chipotle sauce, perfect for family dinners or gatherings.

Ingredients

Scale
  • 8 oz pasta (penne or fusilli)
  • 2 tablespoons olive oil
  • 1 lb chicken breast, diced
  • 1 onion, chopped
  • 1 red bell pepper, chopped
  • 1 green bell pepper, chopped
  • 2 cloves garlic, minced
  • 1 can (14 oz) diced tomatoes
  • 12 tablespoons chipotle paste (or to taste)
  • Salt and pepper to taste
  • Fresh cilantro for garnish
  • Grated cheese (optional)

Instructions

  1. Cook the pasta: Begin by boiling water in a large pot. Add a pinch of salt, then add your pasta of choice. Cook according to package instructions until al dente, then drain and set aside.
  2. Sauté the chicken: In a large skillet, heat the olive oil over medium heat. Add the diced chicken to the skillet. Cook until the chicken develops a golden brown color, approximately 6-7 minutes, stirring occasionally to ensure even cooking.
  3. Add vegetables: Introduce the chopped onion, bell peppers, and minced garlic to the skillet. Sauté until the vegetables soften and the aromas fill your kitchen, about 5-6 minutes.
  4. Incorporate the tomatoes and chipotle paste: Pour in the diced tomatoes along with the chipotle paste. Stir until fully combined, then let it simmer for 5-7 minutes to blend the flavors, stirring occasionally.
  5. Season it up: Add salt and pepper to taste, adjusting as needed to match your spice preference.
  6. Combine with pasta: Toss the cooked pasta in the skillet with the spicy chicken and sauce mixture, ensuring every piece of pasta gets coated well.
  7. Garnish and serve: Transfer to serving plates, finishing with a sprinkle of fresh cilantro and grated cheese if you desire. Serve hot!

Notes

You can prepare the sauce ahead of time and combine it with freshly cooked pasta when ready to serve. Substitute chicken with shrimp or a plant-based protein for variation.
