- 1 Cup Spinach, Chopped
- 1 Cup Artichoke Hearts, Drained and Chopped
- 1 Cup Cottage Cheese
- 1/2 Cup Mozzarella Cheese, Shredded
- 2 Cloves Garlic, Minced
- 1 Tablespoon Olive Oil
- Salt and Pepper to Taste
Instructions
- Preheat your oven to 375°F (190°C).
- Warm the olive oil in a large skillet over medium heat and add minced garlic.
- Add chopped spinach and artichokes, stirring until spinach wilts.
- Combine cottage cheese and mozzarella in a mixing bowl, then fold in the spinach-artichoke mixture and season with salt and pepper.
- Place chicken breasts in a baking dish, seasoning each with salt and pepper.
- Spoon the spinach-artichoke filling over each chicken breast.
- Bake for 25-30 minutes until the chicken reaches 165°F (75°C).
