Ingredients

Scale
  • 4 oz cream cheese, softened
  • 2 tbsp powdered sugar
  • 1/4 tsp vanilla extract
  • 1/2 cup sliced fresh strawberries
  • 8 slices brioche or Texas toast
  • 2 large eggs

  • Butter, for frying

Instructions

  1. Start by preparing your cream cheese filling. In a bowl, combine softened cream cheese, powdered sugar, and vanilla extract. Mix until smooth and creamy.
  2. Spread a generous layer of this cheesecake mixture on four slices of your chosen bread. Top these with a handful of sliced strawberries.
  3. Place another slice of bread on top of each stuffed slice, forming a sandwich.
  4. In a shallow bowl, whisk together the eggs, milk, cinnamon, and vanilla until combined.
  5. Dip each sandwich into the egg mixture, letting it soak slightly on both sides.
  6. Heat a skillet over medium heat and melt butter.
  7. Cook each sandwich for 2–3 minutes on each side until golden brown.
  8. Serve warm topped with maple syrup, extra strawberries, powdered sugar, or whipped cream.

Notes

Make-ahead tips: Assemble the sandwiches the night before and refrigerate. Cook them in the morning for a hassle-free breakfast.
