Description

A refreshing Strawberry Limeade Cake with layers infused with lime and strawberries, topped with creamy frosting.


Ingredients

Scale
  • 2 1/2 cups Cake Flour
  • 2 1/2 teaspoons Baking Powder
  • 1 stick Salted Butter
  • 2 tablespoons Lime Zest
  • 1 1/2 cups Granulated Sugar
  • 3 large Eggs + 3 large Egg Yolks
  • 1/2 cup Whole Milk
  • 1/2 cup Lime Juice
  • 24 drops Green Food Coloring (optional)
  • 3/4 cup Salted Butter (for frosting)
  • 4 ounces Cream Cheese (softened)
  • 1/2 cup Frozen Sweetened Strawberries in Syrup (thawed and pureed)
  • 56 cups Powdered Sugar

Instructions

  1. Preheat your oven to 350°F (175°C). Prepare 2 (8-inch) round cake pans by buttering and flouring them.
  2. Whisk together the cake flour and baking powder in a medium bowl. Set aside.
  3. Beat the salted butter, granulated sugar, and lime zest on medium speed for about two minutes until light and fluffy.
  4. Add the eggs one at a time, beating well after each addition and scraping the sides of the bowl. Follow with the lime juice.
  5. Alternately add the flour mixture and whole milk to the butter mixture, starting and ending with the flour. Stir in green food coloring until evenly combined.
  6. Pour the batter evenly into the prepared pans.
  7. Bake for about 25 minutes or until the tops spring back when lightly touched in the center.
  8. Cool the cakes in the pans for about 7 minutes, then transfer them to wire racks to cool completely.
  9. Combine the butter and softened cream cheese in a stand mixer on medium speed until smooth and creamy for the frosting.
  10. Add pureed strawberry mixture, beating on low until blended. Gradually mix in powdered sugar until desired consistency is achieved.
  11. Level the tops of your cakes if necessary, then frost between the layers and on top.

Notes

Make ahead by baking cake layers a day in advance and refrigerating them wrapped tightly. Experiment with different fruit purees for frosting.
