Description

A delicious and hearty casserole combining street corn flavors with tender chicken, perfect for family dinners.


Ingredients

  • 2 cups cooked chicken, shredded
  • 1 can (15 oz) corn, drained
  • 1 cup cream-style corn
  • 1 cup sour cream
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1/2 cup diced red bell pepper
  • 1/4 cup chopped green onions
  • 1 tsp chili powder
  • 1 tsp cumin
  • Salt and pepper to taste
  • 1 cup crushed tortilla chips (for topping)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large mixing bowl, combine the shredded chicken, corn, cream-style corn, sour cream, cheese, red bell pepper, green onions, chili powder, cumin, salt, and pepper.
  3. Mix well until all ingredients are evenly combined.
  4. Transfer the mixture to a greased 9×13 inch baking dish.
  5. Top with crushed tortilla chips.
  6. Bake in the preheated oven for 25-30 minutes, or until heated through and bubbly.
  7. Let it cool for a few minutes before serving.
