- 12 large jalapeños
- 8 oz cream cheese
- 1 cup sharp cheddar cheese
- 2 minced garlic cloves
- 0.5 tsp smoked paprika
- 0.25 tsp onion powder
- Salt and black pepper to taste
- 6 slices bacon
- Fresh chives for garnish
- Panko breadcrumbs (optional)
Instructions
- Preheat your oven to 400°F and line a baking sheet with parchment paper or foil.
- Slice jalapeños in half lengthwise and remove seeds and membranes.
- In a mixing bowl, combine cream cheese, sharp cheddar cheese, garlic, smoked paprika, onion powder, salt, and pepper. Mix until smooth.
- Fill each jalapeño half with the cheese mixture.
- Wrap each stuffed jalapeño with a half slice of bacon, tucking the ends underneath.
- Place the wrapped jalapeños seam-side down on the baking sheet.
- Bake for 20–25 minutes until the bacon is crispy and filling is bubbling.
- Broil for an additional 2–3 minutes for extra crispiness.
- Garnish with fresh chives and serve warm.
Notes
For milder poppers, use smaller jalapeños or bell peppers. Make ahead and store in the fridge until ready to bake.
