Description

  • 1 pinch salt
  • 1/2 teaspoon white sesame
  • 1/2 tablespoon chopped cilantro leaves
  • 1 egg white
  • 1/2 cup all-purpose flour
  • 1/4 cup cornstarch
  • 1/2 teaspoon baking powder
  • 1/2 cup ice-cold water
  • 1 tablespoon cooking oil
  • 1 pinch salt

Instructions

  1. Prepare the Batter: In a medium mixing bowl, whisk together the all-purpose flour, cornstarch, baking powder, and a pinch of salt. Slowly add the ice-cold water while whisking until you achieve a smooth batter that coats the back of a spoon. Integrate the egg white until the mixture is well combined.
  2. Marinate the Chicken: Add your chicken pieces to the batter, ensuring they are fully coated. Allow them to marinate for about 15-20 minutes.
  3. Heat the Oil: In a deep skillet or wok, pour in about two inches of oil and heat it to 350°F (175°C).
  4. Fry the Chicken: Carefully add the battered chicken in batches to avoid overcrowding. Fry each piece until golden brown and crisp, about 5-7 minutes. Transfer to a plate lined with paper towels.
  5. Cook the Sauce: Clean the wok or skillet, return to medium heat, and add 1 tablespoon of oil. Sauté the minced garlic until fragrant (around 30 seconds).
  6. Stir-Fry the Chicken: Toss the fried chicken pieces with the Thai sweet chili sauce, lime juice, and a pinch of salt until well coated.
  7. Garnish and Serve: Plate the sweet chili chicken, finishing with a sprinkle of white sesame seeds and fresh cilantro. Serve immediately.
