Description

A deliciously sweet bourbon glaze elevates tender chicken pieces and juicy pineapple for a tropical-inspired dinner experience.


Ingredients

  • 1 lb boneless skinless chicken thighs or breasts
  • 2 cups fresh pineapple chunks
  • ½ cup bourbon
  • ¼ cup low-sodium soy sauce
  • ¾ cup brown sugar
  • 3 cloves garlic, minced
  • 1 teaspoon grated ginger
  • 2 tablespoons oil
  • Salt and pepper to taste
  • Steamed rice or fresh vegetables for serving

Instructions

  1. Make the glaze: In a medium bowl, whisk together bourbon, soy sauce, brown sugar, garlic, and ginger until well blended.
  2. Brown the chicken: Heat oil in a large skillet over medium-high heat. Add chicken pieces and brown on all sides for about 5-7 minutes.
  3. Add the glaze: Pour the glaze over the browned chicken and toss in the pineapple chunks.
  4. Simmer: Reduce heat to medium, cover, and let chicken simmer for 10-15 minutes, turning occasionally, until cooked through and glaze thickens.
  5. Serve: Plate the pineapple bourbon chicken over steamed rice or with fresh vegetables, drizzling any remaining glaze on top.

Notes

For a vegetarian option, substitute chicken with tofu. Make-ahead by preparing the glaze a day in advance.
