- 2 cups fresh pineapple chunks
- ½ cup bourbon
- ¼ cup low-sodium soy sauce
- ¾ cup brown sugar
- 3 cloves garlic, minced

Instructions
- Make the glaze: In a medium bowl, whisk together bourbon, soy sauce, brown sugar, garlic, and ginger until well blended.
- Brown the chicken: Heat oil in a large skillet over medium-high heat. Add chicken pieces and brown on all sides for about 5-7 minutes.
- Add the glaze: Pour the glaze over the browned chicken and toss in the pineapple chunks.
- Simmer: Reduce heat to medium, cover, and let chicken simmer for 10-15 minutes, turning occasionally, until cooked through and glaze thickens.
- Serve: Plate the pineapple bourbon chicken over steamed rice or with fresh vegetables, drizzling any remaining glaze on top.
