Description

A creamy and flavorful Tuscan Chicken Pasta with chicken, spinach, cherry tomatoes, and Parmesan, perfect for a comforting meal.


Ingredients

  • 8 oz pasta (pappardelle, penne, or your choice)
  • 2 chicken breasts, diced
  • 2 cups spinach
  • 1 cup cherry tomatoes, halved
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Italian seasoning (optional)

Instructions

  1. In a large pot, heat the olive oil over medium heat until shimmering.
  2. Add the diced chicken, and season with salt, pepper, and Italian seasoning. Sauté until golden brown and cooked through (6 to 8 minutes).
  3. Add the minced garlic and cook for another minute until fragrant.
  4. Toss in the cherry tomatoes and spinach, cooking until the spinach wilts and the tomatoes become tender.
  5. Pour in the heavy cream and bring to a gentle simmer.
  6. Cook the pasta according to package instructions until al dente.
  7. Drain the pasta, reserving some pasta water, and stir it into the creamy chicken mixture.
  8. Gradually mix in the grated Parmesan cheese until melted and the sauce coats the noodles.
  9. Serve hot, garnished with additional Parmesan and black pepper if desired.

Notes

Make-ahead tips: Prepare chicken and sauce in advance and store separately. Reheat just before serving.
