- 8 oz pasta (pappardelle, penne, or your choice)
- 2 chicken breasts, diced
- 2 cups spinach
- 1 cup cherry tomatoes, halved
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- Salt and pepper to taste
- Italian seasoning (optional)
Instructions
- In a large pot, heat the olive oil over medium heat until shimmering.
- Add the diced chicken, and season with salt, pepper, and Italian seasoning. Sauté until golden brown and cooked through (6 to 8 minutes).
- Add the minced garlic and cook for another minute until fragrant.
- Toss in the cherry tomatoes and spinach, cooking until the spinach wilts and the tomatoes become tender.
- Pour in the heavy cream and bring to a gentle simmer.
- Cook the pasta according to package instructions until al dente.
- Drain the pasta, reserving some pasta water, and stir it into the creamy chicken mixture.
- Gradually mix in the grated Parmesan cheese until melted and the sauce coats the noodles.
- Serve hot, garnished with additional Parmesan and black pepper if desired.
