Description

Ingredients

  • 1 cup milk
  • 2 large eggs
  • 1/4 cup melted butter
  • 1 cup fresh or frozen blueberries

Instructions

  1. Preheat your oven to 400°F (200°C) and grease your baking dish for easy removal later.
  2. Mix the dry ingredients: In a large bowl, whisk together cornmeal, flour, sugar, baking powder, and salt until well combined.
  3. Combine the wet ingredients: In another medium bowl, mix together the milk, eggs, and melted butter until smooth.
  4. Blend the mixtures: Gradually combine the wet ingredients with the dry ingredients, stirring just until you see no dry flour.
  5. Fold in the blueberries using a spatula, being careful to preserve their form.
  6. Pour the batter into your prepared dish and bake for 20-25 minutes or until a toothpick inserted comes out clean.
